In the creative heart of Maastricht's Sphinx Quarter, we welcome you to NOVO, our restaurant where we push boundaries and break expectations. For us, it's all about surprise, refinement and taste. This is reflected in our bold interior, our innovative dishes and our exceptional wines. Inspired by Asia and Oceania, we bring together flavours and ideas that surprise and renew.
On Tuesdays, Wednesdays and Thursdays, we present the SPHINX Experience menu. At the table, choose from a selection of 3 courses tailored to the season. A perfect introduction to our cuisine.
At our dessert bar, enjoy two unique journeys; the SWEET experience with delicate homemade desserts (€13 each), and from October the CHEESE experience, a 3-course cheese adventure (€48).

To accommodate every guest with full attention, we present the bill at lunch around 4.30pm. During dinner, we serve the last drinks with the bill around 23.30, so we can finish the evening in style.
